Preserve as much of your harvest as you can for year-round eating. Many vegetables can not be preserved and must be grown in a repeat cycle, succession planting, to provide year-round harvest.
Before making your plan, consider what you could buy fresh at a local farmers market. Buying items that take up a lot of space or is difficult to grow can be beneficial.
